The main course is served as a social dining concept, with food presented in bowls for sharing. Each table selects a social dining host to assist in evenly distributing the food.

  • Stuffed chicken with mushrooms and truffle. Allergens: Lactose
  • Grilled romaine lettuce with truffle emulsion and sunflower seeds.
  • New potatoes tossed with chopped chives in chive oil.
  • King oyster mushrooms with soy. Allergens: Gluten, Lactose
  • Grilled white asparagus with chimichurri.
  • Bean salad on a bed of romesco sauce.

As part of the exclusive 3-course gala menu for the DTU Commemoration 2025, we are introducing a unique social dining concept for the main course, focusing on community. The main course is served as a shared experience, where guests at the table are presented with six delicate dishes to share among the participants.

What is social dining?
Social dining is about creating closeness and community around the meal. The dishes are served in bowls shared among the guests, creating a cozy atmosphere at the table. This format promotes conversation, collaboration, and a sense of shared experience, allowing everyone to taste the many delicious elements of the menu.

The role of the social dining host
To ensure the concept functions optimally, a social dining host is appointed at each table. The host has a few important task:

  • Ensure the food is distributed evenly among the guests.
  • Make sure everyone has the opportunity to enjoy the various dishes.
  • Contribute to creating a balanced and inclusive experience.

This special role helps to emphasize the purpose of social dining – namely, to create a framework for community, dialogue, and mutual respect around the meal.

White wine (Dachs, Riesling 2023)

Dachs Riesling 2023 is a refined white wine that complements sophisticated dishes with its crisp freshness and elegant balance. Paired with the starter, the wine's slightly acidic and fresh character enhances the green notes from asparagus and ramsons, while its minerality underscores the dish's delicate nuances.

Red wine (Venta La Vega, Adaras Aldea 2021)

This organic red wine from Almansa offers a silky and harmonious taste experience with notes of dark berries, spices, and a subtle minerality. Venta La Vega, Adaras Aldea 2021, is perfectly matched to the main course's stuffed chicken, king oyster mushrooms with soy, among other delicate dishes. Served as part of a social dining concept, it creates an inviting and delicate dining experience.

If you would like a glass of non-alcoholic wine, please contact your waiter.
A total of half a bottle of wine per person is allocated.
There will also be water on the tables.

While developing the menu, we have tried to meet as many needs as possible in terms of allergens and preferences.

The same menu will be served for all guests.
