RED WINE: Le Bistro de Montmija Rouge
Le Bistro de Montmija Rouge is made from organic grapes grown in vineyards along the Mediterranean coastline. The typical Mediterranean climate facilitates organic farming. The soil dates from the Tertiary or Quaternary periods and is mainly composed of alluvium, clay, and limestone. The Carignan vines are cultivated as bush vines, while Merlot and Syrah are grown using the cordon method, where the vines are trained along two vertical wires. The organically grown grapes are machine-harvested.
A pre-fermentation cold maceration develops aromas of red berries. Fermentation takes place at a low temperature (20°C), helping to develop the wine’s appealing character and fruitiness. The wine is not oak-aged, but spends 10 months in stainless steel tanks.
The wine has an intense purple color and aromas of blackcurrant, blackberry, and licorice. It is fresh, with an inviting bouquet of dark berries and Southern French spices. The palate is juicy and lively with soft tannins, notes of dark berries, licorice, and spices, and a long, fruity finish.
