We prioritize seasonal and organic ingredients, and a minimum of 60% of the ingredients are organic. Based on the season’s produce, we create flavorful and sustainable dishes where quality and care go hand in hand. Rhubarb is the season’s red rebel. With its long, ruby-colored stalks and its distinctive tart bite, it awakens the senses in its very own way. Both rugged and gentle at the same time – a vegetable disguised as a fruit – it thrives in cool Nordic gardens and faithfully returns year after year.

When the first stalks break through the soil in April, they bring with them the scent of cool spring earth and the promise of tangy compotes, sweet cakes, and fresh juices. Rhubarb has the ability to unite tradition and renewal in a single cut – a taste of childhood kitchens, but also of modern Nordic simplicity. The wines served with the menu are also organic.

WHITE WINE: Le Bistro de Montmija Blanc 

Le Bistro de Montmija Blanc Bio is an exciting and fresh organic white wine from southern France. The wine has a light golden color and refreshing aromas of citrus and white flowers. The taste is very fresh with pleasant acidity and notes of citrus, green apples, and a hint of white pepper. 

On the palate, the wine is pleasantly aromatic and fresh with ripe fruit. A delightful white wine that exudes Southern French charm and is wonderfully easy to enjoy. 

RED WINE: Le Bistro de Montmija Rouge 

Le Bistro de Montmija Rouge is made from organic grapes grown in vineyards along the Mediterranean coastline. The typical Mediterranean climate facilitates organic farming. The soil dates from the Tertiary or Quaternary periods and is mainly composed of alluvium, clay, and limestone.  
The Carignan vines are cultivated as bush vines, while Merlot and Syrah are grown using the cordon method, where the vines are trained along two vertical wires. The organically grown grapes are machine-harvested. 

A pre-fermentation cold maceration develops aromas of red berries. Fermentation takes place at a low temperature (20°C), helping to develop the wine’s appealing character and fruitiness. The wine is not oak-aged, but spends 10 months in stainless steel tanks. 

The wine has an intense purple color and aromas of blackcurrant, blackberry, and licorice. It is fresh, with an inviting bouquet of dark berries and Southern French spices. The palate is juicy and lively with soft tannins, notes of dark berries, licorice, and spices, and a long, fruity finish.

WHITE WINE: Divin 0.0% Sauvignon Blanc 

DIVIN was established in 2019 by the renowned winery Vignobles Villebois, known for specializing in Sauvignon Blanc and Pinot Noir, among others from prestigious appellations such as Sancerre and Pouilly-Fumé. With DIVIN, the winery strives to create high-quality alcohol-free wines that gracefully reflect the Loire Valley’s wine styles. 

All wines are produced using the vacuum distillation method – a technique that preserves the wine’s natural qualities and unique character. First, the volatile compounds (aromas) and a percentage of the alcohol are extracted. Then the remaining alcohol is evaporated, and the alcohol-free wine is blended with the aromatic base to create this crisp Sauvignon Blanc. 

DIVIN 0.0% charms with aromatic notes of green fruits, citrus, and white flowers. The taste is well balanced with pleasant acidity, delivering a fresh, fruit-driven profile with a fine balance between sweetness and acidity. 

RED WINE: Divin 0.0% Pinot Noir
